White Bean Chicken Chili Recipe

1 1/2 cups chopped onion
1 tbsp. olive oil
3 cups chicken broth
3--15 1/2 ounce cans great northern beans drained and rinsed.
2 cups cooked shredded chicken
1--4 oz. can green chilies, drained
1 tsp. ground cumin
1/2 tsp garlic powder
3/4 tsp dried oregano
1/8 tsp pepper
3/4 cup sour cream
1 1/2 cups Monterey jack cheese, shredded

In large stock pot over medium heat, saute' onions in oil, until tender. Stir in the remaining ingredients, except sour cream and shredded cheese. Simmer for 30 minutes, stirring frequently until heated, and begins to boil. Before serving add sour cream and Monterey jack cheese, Stir until cheese is meted. If you want to add a little kick, you can add Tabasco sauce or hot peppers to the top.
