Ingredients:  
1 lb. leeks, washed, trimmed and chopped (about 3c.)
1 clove garlic, finely chopped
1 Tbs. olive oil
2 1/2 c. peeled and cubed Russet potatoes
2 c. low sodium chicken stock
2 c. low fat milk
salt to taste
4 scallions, thinly sliced for garnish

Directions:
Directions:
1. Sauté garlic in oil until soft.

2. Add leeks, cook until translucent.

3. Add potatoes and broth, cook until potatoes are done.

4. Cool before putting in blender or food processor.

5. Pulse and return to pot.

6. Add milk an simmer for a few minutes.

7. Add green onions, if desired.
