2x 8oz filet, 2 in thick
Coffee Rub
Olive Oil

Directions:
Remove from fridge 1 hour prior to cook time
Pre-heat oven to 400
Heat olive oil in cast iron skillet on medium high heat until smoking
Sear all edges for 2 min each
Remove skillet from heat
Sear top of steak for 2 minutes
Sear bottom for 1 minute
place in pre-heated oven and cook according steak preference

- Medium Rare: 7 minutes
- Medium: 10 minutes

Remove steak from skillet and allow to rest for 10 minutes
