4 (bone in & skin on) chicken legs or 8 thighs
2 tsp Kosher salt
1 tsp ground pepper
flour
3 Tbs olive oil
2 Tbs Herbes de Province
1 lemon, quartered
8-10 garlic cloves
4-6 medium shallots peeled and halved
1/3 cup dry vermouth
sprigs of thyme to garnish

Preheat oven to 400 degrees. Season chicken with salt and pepper, dredge lightly in flour.
Swirl oil in large roasting pan and add chicken.
Season with herbes.
Place lemon, garlic, shallots all around chicken. Add vermouth.
Roast 20-30 minutes. Baste, and roast another 25-30 minutes until crispy & done.
