4 quarts of water
2 large chicken breast (skinless/boneless)
1 cup of chicken stock
2 chicken bouillon cubes
2 celery stalks
2 medium carrots
1 med. (or 1/2 lg) vidalia (sweet) onion
1 tablespoon poultry seasoning
1 1/2 to 2 tbsp salt (start low and add as necessary)
1 tsp pepper
2 bay leaves
1/2 package hearty, broad noodles (recommend Penn. Dutch brand)

Fill a 5 qt. pot with 4 qts. of water and chicken stock and bring to a boil. Place 2 chicken breasts into the water and boil for about 10 min. While waiting for water to boil and chicken to cook, finely chop the celery, carrots and onions and put them in the water. Add spices - bouillon cubes, poultry seasoning, bay leaves, salt and pepper to the water. After the water boils and chicken has cooked about 10 min, remove and chop it into small cubes, then return to the pot. Cook everything for about 30 min. then add 1/2 of the package of broad noodles and cook for an additional 15 min. Remove from heat and serve.
