3 Tbs. Butter
2 Garlic Cloves (chopped)
2 stalks celery (diced)
2 carrots (sliced thin)
1 small Onion (diced))
8 cups Chicken Broth
4 cups water
1 cup Spinach
2 9 oz. pkgs. cheese tortellini
1 - 2 cups cooked diced chicken
2 Tbsp. Parsley
Salt and Pepper to taste
Thyme and Basil to taste (or your favorite herb)
Parmesan Cheese

In large Dutch oven sauté celery, carrot, onion and. Garlic about 10 minutes. Add herbs, broth and water. Bring to boil. Cook tortellini about 10 minutes. Add chicken and spinach. Salt and pepper to taste. Add Parmesan cheese when serving.
