1 pkg frozen edamame, shelled
3-4 green onions, chopped
1-2 Tbs cilantro ( or a handful, says Amy!), chopped
4-8 radishes, finely chopped or (opt) buy the matchstick kind
2-3 Tbs olive oil
1-2 Tbs of rice wine vinegar
salt to taste
pepper to taste
1-2 cloves of minced garlic or 1 tsp of garlic powder - optional

Directions:
Directions:
1. Cook edamame according to pkg directions, rinse and drain with cold water.
Set aside.

2. Chop cilantro, onion, and radishes (a mini- food processor saves time).

3. Mix edamame, cilantro, green onions, and radishes together.

4. Add olive oil and rice wine vinegar in desired amounts.

5. Add garlic (optional) and salt and pepper to taste.

6. Chill for at least 30 minutes

Amy says this is a sure winner at summer dinners and pot-lucks. If you don't like cilantro, you can substitute, regular parsley. It is easy to double the recipe.
Best of all, it is vegan and gluten free.
