1 Porterhouse Steak, approximately 1.3 lbs
Coffee Rub
Olive Oil

Directions:
Directions:
1. Remove steak from refrigerator and allow to come to room temp, approximately ½ hour.
2. Pre-heat oven to 400 º F
3. Apply thick layer of coffee rub on each side of steak
4. Allow to rest for ½ hour
5. Heat olive oil in cast iron skillet over medium high heat
6. When oil begins to smoke, place steak in skillet
7. Sear for 2 minutes on the first side of the steak
8. Turn steak over and sear for 1 ½ minutes on second side of steak
9. Place skillet in pre heated oven and bake for 7 minutes
10. Remove from oven and allow steak to rest for 8 minutes

**Daniel Sr's steak needs to be cooked about a minute less than stated above**
