1/2 cup butter
3 cups sweetened shredded coconut
2 cups powdered sugar
1 tsp. (1/2 lemon) lemon juice
6 ounces semisweet chocolate, melted (use chocolate chips & melt in two batches)

Directions:
Directions:
Line baking sheet with waxed paper or foil. Melt butter in large bowl in microwave. Stir in coconut, powdered sugar, lemon juice. Roll a teaspoon of the mixture into a round ball and place on the baking sheet.
Normally you don't have to put them in the fridge at this point, but you can if you think they are not firm enough.
Dip bottom of each into melted chocolate and arrange on the baking sheet. Refrigerate. Serve chilled.

My friend Carol gave me this recipe after everyone was having a fit over them at a party. This makes a jillion of these delicious little bites. Great at Christmas time instead of cookies.
