For the cookie dough:

5 cups flour
5 tsp baking powder
6 eggs
3/4 cup vegetable oil
2/3 cup sugar
2 tsp almond extract
2 tsp vanilla extract

For the icing:

4 cups confectioner's sugar
1 tsp vanilla
water

For the cookies:
Combine flour and baking powder and make a nest.
Into the nest, add the remaining dough ingredients in order. Hand beat the wet ingredients in the center of the flour nest. After wet ingredients are blended, start incorporating the flour into the mixture. Knead mixture lightly until smooth.

Roll dough into ropes about the thickness of a pinky finger. Cut rope into 5 inch pieces and tie into loose knots. Place the cookies 1 inch apart on a parchment paper lined cookie sheet and allow the rest while oven preheats.
Preheat oven to 350 degrees. Bake cookies for 10 minutes or until bottoms are golden brown.

When cookies have cooled, dip them into icing and decorate with sprinkles.

For the icing:
Add confectioner's sugar to a bowl. Slowly add water to the sugar and mix until desired thickness is obtained (you want the icing thinner than frosting). Add vanilla and stir into icing.
