8 slices bacon
1 tomato, seeded & chopped
½ onion, chopped
3 ounces shredded Swiss cheese (cheddar works too)
½ cup mayonnaise
1 tsp. dried basil
1 16-ounce can refrigerated buttermilk biscuits (the ones in layers)
Salt & pepper to taste

Directions:
Directions:
Preheat oven to 375 degrees. Lightly grease a mini muffin pan.
In a skillet over medium heat, fry bacon until crisp. Drain on paper towels.
Crumble bacon & mix with cheese, tomato, mayonnaise, basil & salt & pepper.
Separate biscuits into halves horizontally. Press each half into prepared muffin tin.
Fill with bacon mixture.
Bake for 10-12 minutes or until golden. Can be baked and rewarmed.
Note: You can use Grands (the larger type biscuits) and a regular size muffin pan.
Bake about 20 minutes.
