Avocado-Mandarin Orange Salad Recipe

2 heads lettuce (any variety such as butter, romaine and/or red curly leaf)
1 small red onion chopped fine (could substitute green onions)
1 large can mandarin oranges, drained
2 ripe avocados, sliced

1/2 c. red wine vinegar
1/2 c. oil
1/2 cup orange juice (fresh is best)
2 tsp. grated orange peel
juice of 1 lemon
1/2 tsp. celery seed
1 tsp. dry mustard
1 tsp. salt
1/2 tsp. ground pepper
2 T. sugar

Combine dressing ingredients. Add onions, mandarin oranges and avocado and refrigerate. Break lettuce into bite-size pieces. When ready to serve, pour dressing over lettuce.

This is great to take to potlucks because you can make the dressing mixture ahead of time and pour it over the lettuce when you get there. I've never had to take any home!
