Cheeseburger Soup Recipe

1 lb. ground beef

4 tbsp. cornstarch

1 c. chopped onion

3 c. milk

1 c. diced celery

16 oz. white processed American cheese (cubed/grated)

6 c. chicken broth

1 c. shredded carrots

1 tsp. salt

8 c. diced potatoes

1 tsp. pepper

2 tsp. of oregano

c. sour cream

Brown ground beef with onions and celery. Add chicken broth, carrots, potatoes, and oregano to beef. Bring to a boil. Reduce heat and simmer until potatoes are done.

Dissolve cornstarch in 1 cup of cold water and add to simmering liquid.

Reduce heat to low and add cheese, salt and pepper. Cook and stir until cheese melts. Remove from heat and blend in sour cream. About 10 servings.

*A 10 oz. package of carrot matchsticks is enough.
