6 medium yellow plantains
4 tbsp. olive oil
Salt to taste

Preheat oven to 400 degrees. Cut 2-inch slits in each plantain and wrap with aluminum foil. Bake for 40 minutes. Peel the plantains and arrange them on a serving platter. Drizzle olive oil all over and season.
