2 sticks butter

¾ c. flour

¼ c. celery

½ of a onion

2 cloves of garlic

1 c. fresh okra

3 c. shrimp stock*

2 bottles of clam juice

1 can of tomatoes

3 bay leaves

1 tbsp. of parsley

1 tsp. of Cajun seasoning

1 tsp. of thyme

1 tsp. of basil

2 lb. of shrimp

1½ c. sausage

Directions:
Directions:
Make roux from butter and flour in large heavy skillet. Stir constantly until the color of a penny. (Will burn easily watch you heat, always stir.)

To the Roux add celery, onion, and garlic. Cook about 2 minutes. Add okra, shrimp stock, clam juice, tomatoes, bay leaves, parsley, Cajun seasoning, thyme, basil. Simmer for about 30 minutes

Add shrimp and sausage. Simmer shrimp and sausage are done.

*For the shrimp stock you can use seafood bullion cubes
