Ingredients:
1 pound ground beef
2 cups Salsa, the red chunky style
1 can (15 ounce) small kidney beans, drained
1 can (8 ounce) whole kernel corn
1 small can diced mild green chilies
cup shredded cheddar cheese
cup diced red and green sweet pepper (if desired)
3 cups mashed potatoes

Directions:
Directions:
Saute the ground beef until done, stir in the salsa, kidney beans, corn and pour into a casserole dish, about a 9"x13" size, set aside. Cook your instant mashed potatoes or cooked potatoes whichever you prefer (I use the roasted garlic kind). After they are done, you put the potatoes on top of the meat mixture and then sprinkle on the cheese and if you want the green and red peppers then add them on top of the cheese. Bake in oven at 350 degrees for 30 minutes.
