Leftover spaghetti
2 eggs
⅓ cup milk
salt and pepper
grated Parmesan cheese
olive oil
Chef Paul's Pizza & Spaghetti Magic seasoning (optional)

Directions:
Slightly beat the eggs. Add the milk, salt and pepper, grated Parmesan cheese to the beaten eggs. Pour the egg mixture into the leftover spaghetti and toss until all the spaghetti is coated. Heat a 10" skillet. When the skillet is hot, add the olive oil to cover the bottom of the pan. Pour spaghetti mixture into the hot skillet and press it all down until it is packed. Fry about 5 minutes or more until the bottom is crispy (do not stir this once it is packed down). When the bottom is brown and crusty, slip it out of the skillet onto a plate. Then add more olive oil to the hot skillet. Flip the spaghetti over to the other side and put it back into the hot skillet. Pack down a little and fry it until it is brown and crusty. When it is finished browning on both sides, slip it out of the pan onto a serving platter. Cut into wedges and serve

Note: This really packs down nice when using the thinner size leftover spaghetti like angel hair and No. 11, but I have used any size spaghetti to make this. Optional--some times I add Chef Paul's pizza and spaghetti magic seasoning to the egg mixture that I toss into the spaghetti. This makes it taste like pizza..
