4 c. cooked chicken

8 c. chicken broth

2 large onions, chopped

2 tbsp. hot sauce

1 tbsp. sugar

2 tbsp. soy sauce

2 tbsp. Worcestershire sauce

1 lb. 12 oz. can Tomatoes ??

2 lb. okra

Mix all ingredients except chicken and simmer until okra is almost done. Add Chicken.

(If you want to you can make the Roux and add to the Chicken Broth. It’s optional whether you cook your onions with the Roux or Broth.) If you use the Roux in the gumbo, stir more often because it tends to stick.

Directions:
Mix oil and flour together in a 4 cup measuring cup.
Microwave uncovered on High 6-7 minutes.
Stir every 6 minutes—Roux will be a light brown at this time and will need to cook 30 seconds to 1 minute longer to reach the dark brown color. The Roux will be very hot
Add onion, celery, and 2 Tablespoon File` to Roux in measuring cup, stir and return to microwave. Sauté on High 3 minutes.
Slowly add enough hot tap water to bring Roux to the 4 cup mark.
Stir and you will have smooth dark Roux
