Frozen Lemon Recipe

Grandma Ruth


1/2 cup butter
2 cups graham cracker crumbs
1/3 cup brown sugar
6 eggs - divided
1 cup sugar
2/3 cup lemon juice
4 tsp lemon rind
2 cups whipped cream

Melt butter. Stir in crumbs and sugar. Reserve some crumbs for topping. Press remainder into 9 x 13 pan. Bake at 350 for 10 minutes.
Beat egg yolks until frothy. Add sugar gradually. Stir in lemon juice and rind.
Beat egg whites until stiff. Add to lemon mixture.
Beat whipped cream until stiff. Add to lemon mixture.
Sprinkle reserved crumbs on top. Freeze overnight or until needed. Thaw for 15 to 20 minutes before serving.
