2 cups uncooked elbow macaroni (7 ounces)
¼ cup butter or stick margarine
¼ cup all-purpose flour
½ tsp salt
¼ tsp pepper
¼ tsp ground mustard
¼ tsp Worcestershire sauce
2 cups milk
2 cups shredded cheese (8 ounces) of your choice (I use Colby Jack)

Heat oven to 350º.

Cook macaroni as directed on package.

While macaroni is cooking, melt butter in saucepan over low heat. Stir in flour, salt, pepper, mustard and Worcestershire sauce. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil 1 minute; remove from heat. Stir in cheese until melted.

Drain macaroni. Gently stir macaroni into cheese sauce. Pour into ungreased 2 qt. casserole. Bake uncovered 20-25 minutes or until bubbly.

I usually double or 1 1/2 this recipe for my family (then we can have a little leftover). I will also make this using my pressure cooker. I just cook the macaroni for 5 minutes in my electric pressure cooker (using just enough water to cover macaroni). I drain any excess water. Then I add the other ingredients (substituting 1 can of evaporated milk with milk to equal 2 cups, it's creamier this way) and mix well. Very quick and easy.
