couple pound flank steak
1/4 c. cornstarch
2 TB olive oil
1/2 tsp minced ginger
2 garlic cloves
3/4 c. Soy sauce
3/4 c. Water
3/4 c. Brown sugar
1/2 c. shredded carrots
3 medium onions sliced thinly
optional - pineapple (save juice for cornstarch) , broccoli or veggies of choice

Directions:
Directions:
Brown meat in oil until browned
Mix ginger, garlic, Soy sauce, water, & sugar & pour over meat.
Cover with carrots, onions & any other veggies (do not over cook the veggies)
to thicken sauce, add water or pineapple juice to cornstarch & whisk well to avoid lumps. Do not pour over mixture until all lumps are gone!!
Stir well & simmer until ready to eat
