8 pork rib chops (with bones) cut ¾ inch thick
nonstick cooking spray
1 tablespoon cooking oil
½ cup reduced sodium beef broth
1 tablespoon grated fresh ginger
1 tablespoon reduced sodium soy sauce
2 tablespoons finely grated lime peel
½ to 1 teaspoon crushed red pepper
1 cup unsweetened light coconut milk
2 tablespoons cornstarch
2 tablespoons snipped fresh cilantro

Directions:

1. Trim fat from chops. Coat a large skillet with cooking spray. Cook half of the chops in hot skillet over medium-high heat until brown on both sides. Place in a 4 to 5 quart slow cooker. Add oil to skillet. Brown remaining chops in hot oil. Drain off fat and set aside.
2. In a small bowl combine beef broth, ginger, soy sauce, lime peel and crushed red pepper. Pour half of the broth mixture over chops in cooker. Place remaining chops in cooker; pour remaining broth mixture over all.
3. Cover and cook on low heat setting for 5 hours or on high heat setting for 2½ hours.
4. Transfer pork chops to a serving platter, reserving the cooking liquid.
Cover the chops with foil to keep warm.
5. If using low heat setting, turn to high heat setting. For sauce, strain cooking liquid and skim off fat. Return liquid to slow cooker. In a small bowl combine coconut milk, cornstarch and cilantro. Stir into liquid in cooker. Cover and cook for 15 minutes more. Serve over the chops.
