Ingredients: 1 can (family size) Cream of Mushroom soup 1 tablespoon garlic salt ½ cup sour cream ½ cup canned green chili 2 large chicken breast 1 bag white corn tortillas (about 12-15) 2 bags shredded cheese (mild cheddar, Monterrey Jack with/without jalapeno (green chili)

Directions:In a medium sized saucepan put the cream of mushroom soup, garlic salt, sour cream and green chili together and stir. Make sure stove is set on medium heat. Boil chicken for 45 minutes. Stir enchilada sauce continuously until chicken is done. Shred chicken and blend it in with the sauce. Let this sit for 5 minutes. Heat the oven to 375 degrees. Begin to fry the tortillas and begin to cover the bottom of a casserole dish with the fried tortillas. Then pour some sauce over this and cover with a layer of cheese. Continue this process layer by layer until you reach the top of the casserole dish. Put a layer of cheese at the top and then place the casserole dish in the oven for 15 minutes. Afterwards let stand for 5 minutes and serve. |
