Pie Crust for single crust pie
3 eggs
1 can (15 oz) solid-pack pumpkin
1 cup packed brown sugar
1 teaspoon cinnamon
1/4 teaspoon each ginger, cloves and nutmeg (scant 1/4 teaspoon)
1/2 teaspoon salt
1 cup evaporated milk

Directions:

Beat eggs in a mixing bowl. Add pumpkin, salt and spices; beat just until smooth. Gradually stir in milk. Pour into pie crust.
Bake at 450 for 10 minutes. Reduce heat to 350 and bake for an additional 45-50 minutes or until a knife inserted near the center comes out clean. Cool on a wire rack.
