1/4 cup extra-virgin olive oil, divided...
1 spaghetti squash, about 3 pounds...
2 medium tomatoes, chopped...
2 T capers, drained...
1/3 cup kalamata olives, sliced...
1/4 t salt...
1/4 t pepper...

Directions:
Directions:
Preheat oven to 375º...
Lightly coat a rimmed baking sheet with olive oil...
Cut squash in half, lengthwise, remove seeds...
Arrange squash, cut side down in baking sheet...
Bake squash 35 minutes in oven or until tender when pierced with a fork...
Set squash aside to cool long enough to handle, now using a fork to scrape the meat of the squash, scrape the pulp into a medium bowl...
Chop tomatoes and olives, toss these with remaining olive oil and add the capers, too...
Season mixture with salt and pepper and top the squash with mixture...
Serve and enjoy!

I like to toss squash and mixture once I top the squash...
If it's too dry after tossing, add another tablespoon of the olive oil...
