1 pork tenderloin (about 1 lb.)
2 oz. Deli smoked Gouda (or Gruyere) cheese, shredded
1/2 tsp. Kosher salt
1/2 tsp. pepper, divided
1 tbsp. Canola oil
1/2 cup chicken broth (or stock)
8 oz. sliced mushrooms
1/2 cup whipped cream cheese
1 tsp. Dijon mustard
1/2 cup sliced green onions

Directions:

Cut pork into eight (1-inch thick) slices; shred cheese (about 1 cup).

Preheat large, nonstick saute pan on medium-high heat 2-3 minutes. Season pork with salt and 1/4 teaspoon pepper. Place oil in pan, add broth and mushrooms; simmer four minutes. Remove pork from pan; whip in cream cheese, mustard, and shredded cheese until melted. Stir in remaining 1/4 teaspoon pepper and green onions; return pork to pan. Simmer and stir 3-4 minutes or until pork is 145 degrees. Serve with pasta or rice.
