1 pound dates, chopped
1 pound pecans, chopped
4 rings candied pineapple, diced
3/4 pound candied cherries, diced
1/2 pound moist coconut
1 c. all-purpose flour
1 c. sugar
1 tsp. salt
6 eggs, beaten

Directions:
Directions:
Mix fruits together. Sift together 3 times the flour, sugar, and salt. Add flour mixture to fruits and mix well. Add eggs and mix. Line pan(s) with heavy foil and grease. Bake at 300º for 2 hours with a pan of water in the oven.

Makes 1 4 lb. cake or 2 2 lb. cakes

This recipe was given to me by Carolyn Holly, a friend from Waco, Texas. My mom and I made this cake every Christmas for years.
