Ingredients:  
1/2 fresh jalapeno pepper, finely chopped...
2 cans, (15.5 oz.) red beans, drained...
2 cups unsalted chicken broth or stock...
8 oz. trinity mix, (fresh diced onions, bell pepper and celery)
1/2 pound country-style pork ribs...
2 t Creole seasoning...
Cornbread, buy in bakery or make your own, try Jiffy cornbread mix....

Directions:

Chop jalapeņo pepper, place in slow cooker...
Stir in beans, stock or broth and trinity mix...
Cut ribs into bite size pieces and coat with Creole seasoning...
Stir this into bean mixture and cover...
Cook on low, 6 hours or until pork in very tender...
Serve with the cornbread and enjoy!

Try adding some chopped jalapeņos to the cornbread before baking, oh, so good...
Be sure to have plenty of hot sauce available for those who like "hot" stuff!
