1/2 pound beef skirt steak...
2 T fajita seasoning...
1 T canola oil...
Juice of 1 lime...
8 flour tortillas...
1 package of frozen stir-fry peppers and onions...these are in packages of 14 to 16 oz.

Directions:
Directions:
Slice steak against the grain into 1/2 inch slices...
Place steak in a medium bowl and add the fajita seasoning...
Preheat sauté pan 3 minutes over medium-high heat, add the oil...
Next add the meat to the sauté pan and cook 2 minutes or until meat is browned...
Stir in the stri-fry veggies and cook until veggies are hot, 3 or 4 minutes...
Remove from heat and squeeze mixture with the lime juice...
Serve with warmed tortillas....

To warm tortillas, place in foil, close and put in 250 degree oven for 10 minutes....

Serve with sour cream, gaumole, salsa and cilantro leaves, chopped....
Cold Mexican beer goes very with this as does refried beans or black beans...
