Plank Roasted Prime Rib Recipe

1T Garlic Powder
1T Onion Powder
1T Pepper - freshly ground
1T Rosemary - dried

Roast
1 Plank- soaked overnight or at least for 1 hour
5 lb Rib Roast bones attached
1T Kosher Salt
4T Dijon Mustard
1T Rosemary - fresh, coarsely chopped
2T Olive Oil
4 to 5 Rosemary branches about 5" each

1. Combine all the rub ingredients, mix and set aside
2. Let the roast sit out of the fridge for 1 hour to come to room temperature
3. Season the roast with kosher salt, rub all sides with dijon mustard, sprinkle the fresh rosemary evenly, and then sprinkle generously with the try rub. Drizzle with olive oil and pat the rosemary and the rub into the roast.
4. Pre-heat the grill to 500º Rinse the plank and place it on the cooking grate. Cover the grill and heat the plank - smoking. Reduce the heat to medium low.
5. Lay the rosemary sprigs across the plank. Place the roast on the rosemary and cook 1 1/2 hours checking after 1 hour - internal temperature should be 125º
6. Remove from grill and tent loosely for one half hour.

Serve with au jus and horseradish. Tenting and resting is important - it cooks and you can prepare grilled vegetables - potatoes in the meantime. Made for Carolyn and Glen - Sept 2, 2006 - we all thought it was excellent.
