1/4 cup extra virgin olive oil...
1 T dried rosemary...
2 t dried thyme...
1/4 t pepper...
1/2 t kosher salt...
8 (1 1/4 inch thick) lamb loin chops...(2 to 2 1/2 pounds)

Directions:
Directions:
Preheat grill...
Combine olive oil, Rosemary, thyme, salt and pepper well...
Turn lamb chops in mixture until well coated...
Place on grill over direct heat, cook 4 minutes per side for medium-rare or until 145 degrees when thermometer inserted into chop registers...do not touch a bone doing this...

So good with a true Greek veggie salad, tossed in olive oil with oregano and other spices...
Try a little Greek seasoning on your salad, it's good, too!
