5 T unsalted butter, divided...
1 pound of sea scallops...
Juice and zest of 1 lemon...
4 cloves of garlic, coarsely chopped...
1 cup of Panko crumbs...

Directions:
Directions:
Preheat over to 375º ...
Coat a 9 by 9 baking dish with 1 T of butter...
Season scallops with salt and pepper and place in the baking dish...
Squeeze the juice from lemon over the scallops...
Now preheat a sauté pan over medium heat, add the remaining butter and garlic, cook and stir for about 3 minutes, just don't burn the butter add lemon zest and bread crumbs, cook and stir until all butter is absorbed and bread crumbs are toasted...
Top the scallops with the bread crumb mixture and bake for 14 minutes, just until the scallops are opaque and firm and bread crumbs have browned...

Best served over cheesy grits. A tomato salad goes well, also!
Can also be grilled, just put scallops on skewers, salt and pepper them, cook them 6 minutes per side. Once removed from grill, squeeze lemon juice over them and roll scallops in the butter and bread crumb mixture...
Be sure the bread crumb mixture is browned well when cooking..
Good white wine, chilled is a must...
