1 T olive oil
1 Medium red onion, coarsely chopped
3-4 canned chipotle chiles in adobo sauce coarsely chopped (qty depends on how spicy you want. might want to start small and add if you need more kick)
2 turkey sausage links, sliced into 1/2 inch pieces ( I usually use the italian style turkey sausage links)
1 T chili powder
1 tsp ground cumin
1 tsp ground cinnamon
1 (14 oz) can pinto beans, undrained
1 (14 oz) can black beans, undrained
1 (14 oz) can red kidney beans, undrained
1 (14 oz) can Italian-style diced tomatoes, undrained
1/4 c. coarsely chopped Mexican chocolate (can usually find in the Latin foods sections of supermarket. If you don't have this on hand I have subbed 2-21/2 tbsp of unsweetened cocoa powder but the Mexican chocolate is worth the extra trip to the market)
2 cups of Merlot
1 cup fresh cilantro leaves
1/2 c. shredded low-fat Cheddar

Heat the tablespoon of oil in a large saucepan. Add the onion and saute over med high heat until tender. Add chipotles, sausage, seasonings, beans, tomatoes, chocolate, and wine. Bring to a boil over high heat and then reduce the heat to a simmer. Cover and simmer for 30-40 minutes. Stir in cilantro right before serving add cheese until melted. Serve immediately.

This is a calorie commando recipe that I have adapted. If you want to cut down even more on the calories/fat you can eat without the cheese and it is still good.
