2 (15 oz.) cans black beans (drained)
1 (17 oz.) can whole kernel corn, (drained)
2 large roma tomatoes (seeded and chopped)
1 medium red onion (chopped)
3 tbsp. chopped fresh cilantro
3 tbsp. lime juice
1 tbsp. red wine vinegar
1 tsp salt
1/2 tsp black pepper
2 tbsp. olive oil

Directions:
Directions:
Combine black beans, corn, tomatoes, red onion, cilantro, lime juice, red wine vinegar, salt, pepper, and olive oil in a large bowl, and mix well. Chill covered for 1 hr. or longer before serving. Garnish with avocado slices and cilantro sprigs. Serve with tortilla chips or scoops.

Yield 6 cups
