Chicken drumstick - 6-8 Pieces

Marination:
Yogurt: - 1 c
Ginger paste - 1 tsp.
Garlic paste - 1 tsp.
Red chilly powder (Kashmiri preferable) - 2 tbsp.
Salt to taste
Turmeric- 1 tsp.
Lemon Juice- 1 tbsp.
Oil- 1 tbsp

Cooking:
Butter - 1 tbsp.
Coal briquette - 1 piece

Garish
Lemon sliced
Red Onion sliced
Cilantro- Small bunch

Preparation:
Make 4-5 deep gashes in each chicken piece.

Marination: In a big bowl mix yogurt, ginger paste, garlic paste, red chilly powder, salt, turmeric, lemon juice and oil.Add chicken and give it a good mix using your hands if possible. Make sure all the marination paste reaches deep inside the gashes of the chicken. Keep the marinated chicken at room temperature for 2-3 Hours.

Cooking : In a non stick pan heat butter,once the butter is melted lay pieces of chicken on it. Cook them on low flame for 1 1/2 minutes then flip and cook on the other side. Fry the chicken for 15-20 minutes until they are cooked and turn reddish brown in color.
Now place the fried chicken in the deep bowl. Burn one coal briquette on the stove until it becomes red and put the coal briquette in a small metal cup also add few drops of oil to produce smoke then place the cup over the fried chicken. Cover the bowl with a lid and let the coal smoke seep into the chicken for 1 1/2 minutes.

Garnish: Garnish it with sliced onion,lemon and cilantro.
