5-7 lb. pork roast
4-5 garlic cloves
1-2 tsp. oregano
1 tsp. fennel seeds
1 tsp. red pepper, ground
4 TBSP lime juice
olive oil
salt
pepper
2 c. white rice, prepared

Directions:
Directions:
Score pork roast -- making small incisions on roast.

Make a paste from minced garlic, oregano, fennel seeds, ground red pepper and olive oil. Rub paste into the incisions on roast. Rub outside of roast with lime juice and sprinkle salt and pepper. Put roast in fridge to marinate overnight.

Bake covered at 350º for 30 minutes. Remove cover and cook an additional 2 hours. Baste roast two times during baking. Alternatively, place in crock-pot and cook on low for 8 hours.
