1 TBSP butter

Do not turn on stove yet. In a frying pan add 1 TBSP butter, salt, pepper and Hungarian paprika. Add eggs direct to pan (do not beat prior).

Turn stove on low and stir constantly. Do not let eggs stick to pan. You are not cooking the eggs by letting them sit in the pan till cooked. Rather the constant stirring is gently and slowly cooking the eggs.

Notes from Uncle Matt: Cook slowly and only on low heat! If the eggs stick to your pan, remove from heat. In Hungary, he learned that a double boiler is usually the pan of choice. Eggs will be in small curds and dense. These are best served in small portions. NOTE: Make sure you use Hungarian paprika!
