1 cup shortening
1 cup sugar
1 cup firmly packed brown sugar
2 eggs
1/2 tsp. vanilla
1-1/4 cups flour
1 tsp. soda
1/2 tsp. salt
3 cups uncooked oats (quick or old-fashioned)

Add one of the following ingredients with the oats:
1 6-ounce package semisweet chocolate chips
1 cup flaked coconut.
1 cup raisins
1 cup salted peanuts

I sometimes add 1/2 cup chopped pecans and cut chocolate chips to 1/2 cup.

Combine shortening, sugar, eggs, and vanilla. Beat until creamy. Sift together flour, soda and salt. Add to creamed mixture. Blend well. Stir in oats and any of the above additions you choose.

Shape dough into 1-inch balls. Place about 2 inches apart on parchment paper lined cookie sheets. Bake at 350º for 12 - 15 minutes. Cool about 2 minutes before removing from cookie sheets.

Don't overbake. They are chewy and delicious, especially right out of the oven.
