3 eggs
2 cups sugar
2 cups shredded Zucchini
1 cup oil
2 teaspoons vanilla
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon soda
1 teaspoon baking powder
2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
3/4 cups chopped nuts

Directions:

Only grease the bottom of 2 loaf pans and preheat the oven to 325º. In a large bowl, beat eggs till foamy. Stir in sugar, zucchini, oil and vanilla. Add remaining ingredients and blend well, by hand. Pour batter into pans. Bake 40-50 minutes. Until toothpick inserted in center comes out clean. Remove from pan after cooking 10 minutes.

*Instead of loaf pans try a fluted tube pan. You now have a great Zucchini Cake.
