1 lb. Beef - cubed
2 Tbsp. oil
1/2 can tomatoes - chopped
2 carrots
2 med. potatoes
1/2 pkg beef stew seasoning
sm. onion chopped
sm. green pepper chopped
1 bay leaf
water
salt
pepper

Directions:
Directions:
Dredge beef in flour and brown in oil (or if using left over beef & gravy from roast) put beef in large pan with sauteed onion, green pepper & celery coarsely chopped. Add tomato, carrots, potatoes, beef stew seasoning, water to cover and bay leaf. Cook for several hours adding water if needed. Salt and pepper to taste.

Note: you can use any other veggie you have on hand or 1/2 pkg frozen mixed veggies.
