1 jar watermelon rind (or) 1 lb. fresh chicken liver
8 strips bacon, cut in thirds

Preheat oven to 375º.

Open jar of watermelon rind. Remove a piece and wrap it in bacon. When all pieces are wrapped, bake for 15 minutes, turning halfway. It's done when bacon is cooked thoroughly -- brown and crispy.

Alternative: Replace the watermelon rind with fresh chicken liver. Follow directions above.

Watermelon rind is sweet tasting and during prep your fingers will be sticky. Discard the syrup in the jar. Cut large rind pieces as needed.
