18 large dates, pits removed
4 oz. goat cheese
6 strips bacon, cut in thirds

Preheat oven to 375º.

If the dates have pits, slice them lengthwise to remove the pits. If pits were already removed, then it's time to stuff dates.

Use a butter knife or small spoon and stuff a little goat cheese in each date. Then wrap each date with bacon. To prevent dates from opening during baking, secure bacon wrapped date with a wooden toothpick.

Bake for 14-17 minutes, turning halfway.

Goat cheese may be substituted with blue cheese or cream cheese. These may be prepared in advance but bake when ready to serve. These are best served straight from the oven.
