2 cups of AP Flour
1 1/2 cups Sugar
1/2 cup Oil
2 eggs
1 cup Bananas, mashed
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup chopped pecans

Directions:
Directions:
Preheat oven to 400º. Grease bottom on loaf pan. Sift flour, sugar, baking powder and salt into a medium bowl; make a well in center. Mix milk, egg oil, banana and pecans in a small bowl. Pour mixture into well. Mix batter just until moistened, do not over-mix. Spoon batter into prepared pan. Bake until center springs back with touch or until golden brown; approximately 40 minutes.

Variations: Blueberries or raisins may be substituted for bananas.
