2 T olive or corn oil
1 sliced white or brown onion
1 garlic
1 chile poblano
½ c. mushrooms (option)
6 large slices cheese queso fresco
Container of El Salvadorenan or Mexican cream
Green or red chile (option)

Directions:
Directions:
1 Black the poblano chili on the grill then put into a bag and keep it warm about 20 minutes. It should be limp

2 Wash and clean out chile, throwing away seeds and tops

3 Saute onions

4 Chop and add small pieces of chili

5 Turn down the heat and add garlic and mushrooms

6 Put together sauce, cheese, cream and chile (optional
