Zucchini
peeled eggplant
carrot
onion
All sliced and chunked
2 green peppers
1/2 cup peas
2 tbsp. parsley
1/3 cup olive oil
3 tsp. salt
2 tsp. Tabasco,
1 tsp pepper
Mix.

Slice
4 large tomatoes

1/3 cup raw rice
1/2 cup olive oil
2 tbsp. white or red vinegar
1/2 cup water
1 3/4 cups gated cheddar cheese

Directions:
Directions:
Using 1/2 tomatoes to line bottom of greased (PAM) 9 x 13 pan.
Cover with 1/2 of veggies, sprinkle 1/3 cup raw rice. Add rest of veggies and top with rest of tomatoes.

Combine and add 1/2 cup olive oil, 2 tbsp. white or red vinegar and 1/2 cup water. Cover and bake at 350º for 1-3/4 hours. Uncover and sprinkle with 1 3/4 cups grated cheddar cheese. Melt in oven.
