Basic egg noodle Pasta - KitchenAid mixer
4 large eggs
3 1/2 cups sifted flour
1 tbs water
1tbs salt

Cheese mix
1/2 processed cheese per cup of pasta
1/4 cup Parmesan or cheddar cheese
dash of oregano
splash of milk

Directions:
Directions:
Place flour and salt in mixer bowl beat at 2 (speed)with flat beater and gradually add eggs and 1 tbs water. Mix for 30 sec - exchange for dough hook. knead for 2 more minutes. You may need to add a bit more water if too dry. Hand knead dough until smooth and holds together like a ball.
Form walnut size pieces and extrude with medium or small elbow macaroni plate.

cook 2-5 minutes if fresh 7 minutes if dry. Makes about two cups

Heat 1/2 c process cheese (per cup of Macaroni) in microwave for about 1 minute. Mix into pasta with 1/4 cup grated Parmesan cheese and a dash of milk. Add a pinch of oregano. You can add hotdogs if you want. Place in a greased 8x8 (larger if cooking more than a cup) dish. Bake at 350º about 10 minutes

For Jenna and Tim's 6th anniversary we babysat the boys. Mason made this dish with his Nonna. He did a great job but was too keen on the pasta dough!!
