3 chicken breasts
3 cups water
1 bay leaf
salt, pepper to taste
8 oz. cheddar cheese or Monterey jack
2 tbsp. onion flakes
1 bag of Doritos

For mix:
1 10 oz. can cream of mushroom soup, undiluted
1 10 oz. can cream of chicken soup, undiluted
1 10 oz. can Rotel tomatoes ( with green chilies)
1 cup liquid from chicken

Directions:

Boil 3 chicken breasts with the 3 cups of water, bay leaf, salt and pepper to taste. Let chicken cool. Save one cup of liquid from chicken. Grate cheese. Cut chicken into one inch pieces and place in a 9"x13"x2" baking dish. Sprinkle with onion flakes and a dash of salt, pepper. Top chicken with half the grated cheese. Crush half a bag of Doritos and spread on top of cheese. Combine the ingredients for mix. Pour over meat and chips. Top with remaining cheese and crushed chips.

Bake at 350 degrees until bubbly, 30-40 minutes.
