3 c. plain flour

2 c. sugar

1 tsp. salt

1 tsp. soda

1 tsp. cinnamon

3 eggs

1½ c. Wesson oil

1 tsp. vanilla

8 oz. can crushed pineapple, undrained

2 c. chopped pecans

1½ c. chopped bananas

Directions:
Directions:
Mix dry ingredients in a large mixing bowl. Add eggs and oil, stirring until dry ingredients are moistened.
Do not beat. Stir in vanilla, pineapple, 1 cup chopped pecans and bananas.

Spoon onto 3 well greased and floured pans. Bake at 350º for 25 to 30 minutes. Cool in pan for 10 minutes.

Remove from pan and cool completely. Spoon frosting between layers and all over cake. Sprinkle with 1 cup chopped pecans.

8 oz. pkg. cream cheese

1 box confectioner’s sugar

1 stick butter

1 tsp. vanilla

Combine cream cheese and butter, cream until smooth.
Add powdered sugar, beating until light and fluffy. Stir in vanilla.

*The cake is easier to frost if you increase the batch to 1½ recipes.
