1 1/2 cups uncooked oats
1 1/4 cup applesauce
1 1/4 cups flour
1/2 cup brown sugar
1/3 cup oil
1/2 cup raisins or craisins (optional)
1 tsp. baking powder
3/4 tsp. baking soda
1 tsp vanilla
1 tsp cinnamon
1 egg white

Directions:
Directions:
Preheat oven to 360º. Line muffin pan with paper baking cup. Combine oats, flour, brown sugar, cinnamon, baking powder, baking soda. Add applesauce, oil, egg white and vanilla. Mix well. Bake 20 -25 minutes or until golden brown.
