2 eggs
1 cup flour
1 cup milk
1/2 tsp salt
Lard, oil or drippings from roast

Directions:

Mix first 4 ingredients in blender and blend well. Let sit in refrigerator 1 or 2 hours, blending occasionally. Put 3/4 tsp lard,oil or roast drippings in each muffin cup (works best if muffin tin is well used).

When roast is finished cooking, put muffin tin in oven and raise temperature to 450 F. When oven temperature is reached the oil will be smoking.

Remove batter from refrigerator and blend quickly. Remove muffin tin from oven and pour in batter. Each muffin cup will be 1/2 to 3/4 full. Return to oven and cook for 10 – 15 minutes.

Makes one dozen.
